01 / ABOUT THE PLACE

About this place

Tucked away on the 6th floor of a building south of Shinjuku Station, Sushi Wasabi lets guests watch the chef at work across the counter as each piece of sushi is prepared. At lunchtime, the special bara-chirashi offers an accessible option served with red miso soup and pickles, layering varied textures and rich seafood flavours with every spoonful. Nigiri lunch sets highlighting lean tuna, kuruma prawn, and scallop are also on offer, suiting everything from a casual midday meal to an indulgent spread.

In the evening, the flagship Chef's Omakase Course stands out for its deliberate shift in seasoning alongside seasonal small dishes, sashimi, and grilled items. The sushi progression begins with nigiri seasoned with white vinegar, pauses for a palate cleanser, and advances to richer pieces dressed with red vinegar—a progression designed to draw out the character of each seasonal catch. Diners seeking a simpler evening meal can also choose an eleven-piece nigiri set that weaves in cuts like medium-fatty tuna and sea urchin.

The drinks list draws sakes from across Japan, including Hidakami, Kuheiji, and the sparkling nigori Gangi, alongside shochu and the house tea highball. Within the non-smoking counter space, easygoing conversation with the chef offers a relaxed escape from the commotion of Shinjuku.
